Lemon Chia Seed Pudding (makes 2 individual small jars)



If you want dessert for breakfast, this is definitely the right recipe for you!


Lemon Chia Seed Pudding (makes 2 individual small jars)


Chia Seed Pudding Layer Ingredients

  • 3 T. chia seeds

  • 1/2 cup almond milk

  • 1 T. raw honey

  • 1/2 t.  vanilla powder

  • 1/2 T. lemon zest

  • 1 serving of vanilla protein powder or unflavored protein powder (Optional. Depending on brand, it may change flavor and texture).

Lemon Pudding Layer Ingredients

  • 1/2 raw cashews, soaked in hot water for 20 min

  • 1/2 cup almond milk

  • 2 T. fresh lemon juice

  • 1 T. lemon zest

  • 1/8 t. turmeric (optional for color)

  • 1 T. maple syrup

  • 1/4 t. vanilla powder


Toppings Ingredients

  • Thin lemon slices (optional for garnishes)

  • Simple Mills Honey Cinnamon Sweet Thins, crushed up


Directions

  1. In a small bowl, mix together the chia seed pudding ingredients. Divide the chia seed pudding into 2 small jars.

  2. In a blender, blend the lemon pudding layer ingredients together. This blends best in a small blender or you can also use an attachment like the Blendtec Twisted Jar.

  3. Divide the lemon pudding among the 2 jars, pouring it on top of the chia seed pudding.

  4. Set in the fridge overnight and enjoy for breakfast the next morning.

  5. When it is time to eat the pudding, crush up Simple Mills Honey Cinnamon Sweet Thins and sprinkle on top of the lemon chia seed pudding. Enjoy!
