When I was at the Swiss Mountain Clinic, every Sunday they had a buffet at lunch. They had the best pizzas at the buffet! I was so excited to see them the first Sunday I was there because I love pizza! It felt like a little bit of home. Now, I don’t remember what the pizza was like, what it tasted like, or what was on it… It was all kind of blur because I travelled across the world right after chemo, so I was exhausted and don’t remember every single detail! However, this is how I would imagine a Swiss Alps Pizza would taste like- vegan, full of seeds, fiber, and fresh veggies! Enjoy my take on how I’d imagine a Swiss Alps Pizza 💗⛰️
Savannah’s Swiss Alps Inspired Vegan Pizza (Makes 4 individual pizzas)
Seeded Vegan Pizza Crust Ingredients
2 T. psyllium husk powder
1 zucchini, peeled
1 large tomato
3/4 cups raw pumpkin seeds
3/4 cups raw sunflower seed kernels
2 T. extra virgin olive oil
2 t. dried basil
1 t. dried rosemary
1 t. sea salt
1/2 cup + 2 T. ground flaxseed
6 dates, pitted
1/2 T. garlic, minced
Pumpkin Seed Pesto Ingredients
2 cups fresh basil
1/4 cup extra virgin olive oil
1/2 cup raw pumpkin seeds
2 t. garlic, minced
1/4 t. sea salt
Juice from 1 lemon
Cashew “Cheese” Ingredients
1 cup raw cashew, soaked in hot water for 20 minutes
1 1/2 t. coconut milk
1 T. lemon juice
1 1/2 T. nutritional yeast
1/2 t. sea salt
1/2 t. garlic powder
Pizza Toppings Ingredients
2 cups spring mix
1/4 sweet onion, diced
1 cup baby Bella mushrooms, sliced
1/4 cup Roma tomatoes, halved
Sea salt, pinch
Avocado oil spray
Pizza Crust Directions
Set the oven to 200°F.
Line 2 baking sheets with parchment paper.
Add all the pizza crust ingredients to a food processor and purée until smooth, sticky pizza crust is formed.
Divide the dough into 4 sections.
With damp hands, press down each dough ball onto the pans lined with parchment paper creating 4 flat circles about 1/4” thick.
Slowly bake the pizza crusts in the oven for 2 1/2 hours.
Let cool on the pan.
Pumpkin Seed Pesto Directions
In a food processor, purée all the pesto ingredients together.
Pizza Topping Directions
Spray a frying pan with avocado spray.
Add all the pizza toppings to the pan.
Cook on medium-low heat until veggies are soft, onions are translucent, and spring mix has shrunk.
Cashew “Cheese” Directions Blend In
In a blender, add all the cashew “cheese” ingredients. Blend until smooth. You have to work with the cheese using a spatula a couple times to scrape the sides, and blending again until smooth. Be patient and keep working with it!
Pizza Assembly Directions
Once the crust is cooled, spread the pesto on top, and add the cheese. You can just “plop” the cheese on top in small portions around the pizza. Add the pizza toppings.
Cut the pizza in slices and enjoy!
